Siuijeonseo, a Korean dining establishment in Gwangalli, Busan, is gaining attention for its unique course meals inspired by the Joseon Dynasty cookbook 'Siuijeonseo'. This newly opened restaurant reinterprets traditional Korean cuisine with a modern sensibility, featuring dishes like baektang (white soup) and hongtang (red soup) bansang (set meals) based on Busan's representative gukbap (rice soup).
'Siuijeonseo Gwangalli' draws its menu from the 422 recipes recorded in the late 1800s cookbook 'Siuijeonseo'. The restaurant boasts a tranquil Hanok-style interior with tiled eaves, stone lanterns, bamboo, a small pond, and mist effects, creating a serene atmosphere. The Siuijeonseo bansang is priced at 35,000 KRW per person, with a choice of baektang or hongtang. The main chef reportedly aims for a Michelin star for the brand.
Visitors have expressed positive feedback regarding the ambiance and course structure of 'Siuijeonseo Gwangalli'. The four-course progression, starting with 'Si' (omija tea and dried pollock flakes), followed by 'Ui' (abalone chae-gyomyeon), 'Jeon' (baektang/hongtang bansang), and concluding with 'Seo' (yuzu pumpkin sherbet), is particularly noted. The savory abalone chae-gyomyeon with perilla oil and the clean, hearty bansang have received high praise.
